Detection of Pork Gelatin in Jelly Candy Using Fourier Transform Infrared (FTIR) and Polymerase Chain Reaction (PCR)

چکیده

This study aims to identify the content of pork gelatin in jelly candy using Fourier Transform Infrared (FTIR) and Polymerase Chain Reaction (PCR) methods. method provide information public choosing halal tested food products. By uses a stepwise cluster survey obtain sample then samples obtained were isolated gelatin, analyzed FTIR spectrophotometer method, continued with data analysis PCA (Principal Component Analysis). In addition, DNA detection was carried out PCR method. The results spectrum at wavelengths 1450 – 1300 cm -1 , 1543 2800-3000 . classification sources resulted proportion value Principal 1 (PC 1) 39%, 2 2) 31%, 3 3) 14.5% cumulative PC 1, 2, is 84.5%. amplification by proved that all A, B, C, D, E did not contain pork.
